I believe that I have a new challenge ahead of me. My attempts to make good eggs-over-easy were not especially productive today. I think that I either need to use a large skillet or work on flipping the eggs better. Today the yolks broke because... well it was early and I'm not super coordinated first thing in the morning. Since I use a small skillet all of the egg whites run together and I have to flip over a mass of eggs. I'm sure that using a large skillet (large enough to not have the eggs touching each other) would solve the issue, but since we don't have many skillets that would work, I usually resolve to using small skillets. I think that tomorrow morning I'll try using a large skillet and see how that works.
I spent a couple hours later in the morning working on an assignment with Timbo for our Regression class. Then we spent some time looking at different classes that are being offered this spring. Right now I'm only taking two classes (and studying for exam MFE!), but I may take a third one. There is an "Introduction to Operations Research" class that looks really interesting... but I don't know how much time it would take each week. I'm going to email the professor and see if I can get a feel for it. I just don't want to jeopardize my exam because I decided to take a class that I don't need. It just sounds so cool!
After class I came home and Kimmy and I made dinner. There was a recipe in our cookbook for roasting a whole chicken... but we thought that seemed silly, so I just used the sauce from the recipe and cooked chicken breasts in it. It was really good.
So then I relaxed for a while. I don't have anything immediately due, so I just took some time to relax before my trip tomorrow. Later on I did some packing and put some info together.
And now I'm off to bed. Good night!
